Dziriette - algerian recipe

Ingredients :

For the stuffing

- 500g almond powder

- 160g white sugar

- 3 to 4 eggs

- 1 spoon of orange tree flower watter

- 1 spoon of vanila liquid


For the dough

- 250g of white flour (4measures)

- 75g of smen (1 measure)

- watter + orange tree flower watter (1 measure)

- 1 spoon of vanila liquid


Honey syrup

- 2 kg of sugar

- 1L of watter

- Slices of lemon

- 1 spoon of honey


Stuffing :

1- Mix the almond powder with the sugar and the vanila liquid

2- Add the spoon of orange tree flower watter

3- Add the eggs 1 by 1, because you might need less than 4 eggs, it have to become soft enough but not liquid

4- Put the stuffing into some clean film and leave it to rest the whole night into the fridge



(On the next day : )


Honey Syrup :

1- Mix sugar, watter and lemon in a sauce pan

2- Cook on low heat for around 30min until you get a golden color

3- Add the spoon of honey and the spoon of orange tree watter

4- Boil it then reduce to low heat for few minutes

5- Switch of the heat then leave the syrup cool down


Dough :

1- Mix the flour with the vanila liquid and the smen (Scrub the ingredients between you hands)

2- Add little by little the liquid (watter + orange tree flower watter)

3- Keep wotking on the dough with your hands in the container then on the work plan

4- Put the dough into some clean film and leave it to rest for at least 1hour on room temperature



1- Spread some flour on your work plan

2- Spread the dough with your pastry roller in the shape of a rectangle

3- Bring both sides into the middle, then spread it again

4- Repeat until your dough become smooth and uniform

5- Spread the dough as thin as possible without breaking it. (If you have use a pasta machine)

6- Preheat your oven to 180C

7- Use round cookie cutter (7.5cm), do it on all the dough, leave the small round dough on the side with clean film on, so they don't dry

8- Take the stuffing and make smalls balls all 20g to 25g, leave them on the side too

9- Put 1 egg white into a bowl and with a brush spread some egg white on the edges of the round dough

10- Put the stuffing ball into the middle of this dough and with the help of a toothpick form spikes all around the stuffing with the dough (pinch the dough with your finger and with the toothpick take some of the stuffing when you form the spikes to make them stay in place)

11- Spread some egg white on top of the dziriette

12- Add an almond on top of the dziriette for decoration

13- Cook the dziriette in the oven 20 to 25min.

14- When they are cooked they have to have a golden color

15- Poor them straight out of the oven into the cold honey syrup for a few second

Then your dziriette are ready
